Jam drops are super easy to make and a winner in our house every single time we make them. They can be made to any size to perfectly fit a lunchbox and you can choose any type of Jam for the Jam top.
Our two favourites are Strawberry and Blueberry. Yum!
Jam Drops

250g Softened Butter
1 cup Caster Sugar
2 teaspoons Vanilla Extract
2 & 2/3 cups Plain Flour
1 egg
Pinch of Salt
3/4 cup of Jam
Directions
- Preheat oven to 180C
- Cream together butter and sugar with an electric beater
- Add egg & vanilla extract and beat together until smooth
- Add flour & salt to the bowl and fold in with a spatula until fully incorporated
- Roll 1tbsp of dough into a ball. Press down with your thumb in the middle of the dough to create a well
- Place onto a lined cookie tray leaving 3-5cm between each cookie. Fill each dent with Jam
- Bake for 12 – 14 minutes and allow to cool completely before eating
