Cranberry Muesli Bars

Obviously for a lot of schools cases, they are nut free and this is NOT a nut free recipe. My kids school is not nut free, so we are able to make these for school lunches pretty regularly and each time they are a hit.

It’s really not very often that my children like something, so the fact that these fly out of the fridge makes me very happy. I believe that the thing that makes my kids head over heels for them is actually the dried cranberries.

Cranberry Muesli Bars

Difficulty: Medium

Such a fantastic snack for the kids that is jam packed with goodness

Ingredients

  • Binding
  • 1/2 cup peanut butter

  • 1/2 cup honey

  • Filling
  • 1 & 1/2 cup oats

  • 1 cup dried cranberries

  • 1/4 cup desiccated coconut

  • 1/2 cup almonds

  • 1/4 cup pepitas

  • 1/4 teaspoon salt

  • 1/2 teaspoon cinnamon

  • Choc Drizzle (optional)
  • 1/4 cup dark chocolate chips

  • 1 teaspoon coconut oil

Directions

  • Mix all filling ingredients together in a bowl.
  • Mix binding ingredients together in a pot over medium heat until smooth.
  • Turn the stove to low and continue mixing until the binding ingredients begin to thicken. A caramel consistency is ideal (thickness of binder will determine chewiness)
  • Quickly mix filling and binding together. It will become tougher but will come together
  • Press mixture into a lined 8×8 pan, and refrigerate until firm
  • Melt chocolate and coconut oil in the microwave until runny and drizzle over the top of the muesli bars
  • Refrigerate until drizzle sets then cut into bars. Store in the fridge to retain firmness
