Weet-bix Slice

As we slowly change to being a low-tox home, we are saving so much money due to HOW we chose to spend our money. Whilst it is slightly more labour intensive in regards to feeling like “I live in my kitchen” the savings are astronomical.

To buy take away for a family of 5 is very costly in this current day and age. For decent takeaway it was around about $100+ just to feed everyone. Not to mention the rising cost of school snacks and well, they have also not been exempt from shrinkflation.

I have made a stealthy return to making a lot of snacks for the kids at home myself. Some are a little guilty in the fact they are chocolate based. Some are savoury and packed full of veggies. The thing is, it’s a balanced diet and having some chocolate things here and there helps the kids to not feel like they are missing out.

It’s been especially harder as my toddler is going through her phase of not wanting to eat which has been horrendous. She has become very picky. Picking my battles has been a big sticking point recently, and well, if she will eat a Weet-bix slice, then it’s a win for the pure fact she has at least eaten something.

So here is the Weet-bix slice recipe we have been absolutely loving!

Weet-bix Slice

Ingredients

  • 12 Weetbix (Crushed)

  • 1/4 cup cocoa powder

  • 3/4 cup brown sugar

  • 1/2 cup plain flour

  • 1/4 cup water

  • 200g melted butter

  • 1/2 cup desiccated coconut

  • 1 eggs

  • Choc Top
  • 250g dark baking chocolate

  • 1 tablespoon coconut oil

Directions

  • Pre-heat oven to 160C
  • Mix all ingredients together in a bowl (excluding choc top ingredients)
  • Line a rectangle slice tray with baking paper
  • Press mixed ingredients into the tray till flat
  • Bake for 15-20 minutes or until cooked
  • Leave to cool in the slice tray
  • Once completely cool, melt dark chocolate and coconut oil together in a double boiler
  • Spread chocolate and coconut mixture evenly over the top of the slice and leave to cool
  • Once chocolate is set, slice to desired size and enjoy

Notes

  • Melted butter can be swapped to equal amount of oil, although flavour and consistency will change
  • Optional to sprinkle extra coconut over the top of the slice (or M&M’s if you want a bit of added guilt)
