Zucchini Slice

One thing that my kids really love in their lunchbox in lieu of a sandwich is zucchini slice. It’s also a regular in the rotation during the week at any given point as we tend to use up a lot of leftover produce and eggs prior to our next shop to make zucchini slice.

During Summer, zucchini’s are easy to grow, almost tasteless in food, and you can get a huge abundance of zucchini from one plant. This makes for a very inexpensive option for something to do with all the added zucchini’s from the garden.

Here is my Zucchini slice recipe that is an absolute HIT in our house.

Ingredients

  • 375g Zucchini grated ( approx. 3 medium Zucchini)

  • 1 small carrot

  • 1 large onion diced

  • 3 rashers of bacon (diced)

  • 1 cup Grated Cheddar Cheese

  • 1 cup self raising flour

  • 1/2 cup oil of vegetable oil

  • 5 eggs (beaten)

  • garlic, salt & pepper to taste

Directions

  • pre-heat oven to 180C
  • Mix all ingredients together in a bowl
  • Line a square baking dish with baking paper
  • Add mixed ingredients to lined baking dish
  • Bake 180°C 30 – 40minutes or until browned

Notes

  • sliced tomato laid over the top prior to baking is also a yummy switch up
