It can be really hard sometimes to find things that our kids love to eat in their lunchboxes. Oat and Honey Slice is an easy home made swap for muesli bars, incredibly easy to make and an absolute child pleaser.
Adapting to completely home made lunchboxes and we adapt to being a low-tox home has been an interesting journey, needing to find easy swaps for things I previously purchased.
Some things have been super easy, and some I am still figuring out. But this oat & honey slice was super easy, and my children have LOVED it.
Oat and Honey Slice

2 cups rolled oats
1 cup plain flour
3/4 cup desiccated coconut
1/2 cup brown sugar
125g butter
1/3 cup honey
1 teaspoon baking soda
2 tablespoon hot water
- Choc Drizzle (optional)
80g Dark Chocolate
1 tablespoon coconut oil
Directions
- preheat oven to 180C and line a slice tray
- in a bowl, mix the oats, flour, coconut and sugar
- in a saucepan, melt the butter and honey together on low to medium heat
- stir baking soda into hot water and add the mixture to the butter mix
- pour the wet ingredients into the dry ingredients and mix well
- press the mixture firmly into the slice tin
- bake 12-15minute or until golden
- cool completely
- once cooled, melt dark chocolate and coconut oil and drizzle over the top.
Notes
- There are a lot of variations possible for this recipe including, Choc Chip, Apple and Cinnamon, Seeds and Nuts or even a Jam Swirl.
