Grape and Raspberry Cordial

I made this cordial for my children last week for the first time in over 5 years, and it was an absolute hit!

I honestly don’t really remember why I stopped making cordial and it’s a genuine big regret of mine. It takes time and patience especially needing to strain the cordial, but asides from that, it’s an extremely easy recipe!

Grape and Raspberry Cordial

Difficulty: Medium

Grape and Raspberry cordial is a medium difficulty recipe that does require some patience. Although if you are beginning to become interested in preserving without needing to water bath or pressure can, this is a great introduction point to learning the basics.

Ingredients

  • 1.8kg Grapes (red or black work better)

  • 200g of raspberries (fresh or frozen)

  • 1 cup of sugar

  • 1 cup of water

  • 1-2 tbsp of lemon juice

Directions

  • Ensure all stems from grapes are removed and all fruit is washed well
  • Add fruit and water to a pot & simmer on low – medium for 30-40 minutes, mashing the grapes one soft enough to further release more juices.
  • Strain the mixture through a cloth or fine sieve to remove all seeds and pulp.
  • return the strained juice to a pot and add sugar and heat until dissolved. Does not need to boil.
  • stir in the lemon juice and let cool
  • store in a clean glass bottle in the fridge
  • To serve
  • Mix 1 part cordial to 3-4 parts water (sparkling water is also optional)

Notes

  • Honey can also be added to taste in the recipe. Vanilla is also a nice twist
  • You can use less sugar in the recipe although it won’t last as long

I re-used old Schweppes soft drink bottles that were glass to put the cordial into, which really saved my $$ as I didn’t need to run to the store to purchase something and in turn also made it low-tox and sustainable.
